Yep, we're spoiled!




What we have been working on lately. Days and days working with car dealerships and we received the most help and service from Larry H. Miller in Murray. We felt like we had been hand carried through their dealership and the whole time we were there. And unlike Stockton to Malone at least they didn't tell us that the only we could get would be the Silver one that was on its way to Utah, via a boat from Japan...the only CR-V they could find....yeah we thought that was weird too.

Beyond that, life has been super busy. We are almost done with the bulk of Christmas shopping (so I may actually enjoy the season). School and work are crazy and we both just finished our first quarters.

Now we just have the finishing up of High School Football. AF is done, Bingham could-go-all-the-way starting with another game on Friday...yeah, couldn't resist that one. Once again raising that question...will it be a great day to be a Miner?

Medical Miracles

Several weeks ago my mom had a Total Ankle Replacement. It is so amazing! See here for the video, no it's not her surgery, it's just a video on how they preform the procedure. This is such a huge blessing for she and my dad! She had an ankle fusion 8 years ago that never fused. She has basically been walking on a broke ankle/foot and two huge broken screws for the last few years. We were able to go up have dinner with them last night and just hang out and talk for several hours. I am so grateful for parents that love each other and support each other. I know I'm biased but I really feel that we both have the best families!

Happiness


There's a song from the "You're a Good Man Charlie Brown" musical called Happiness it talks about what Happiness is listing things like 2 kinds of Ice Cream, 5 different Crayons, sharing a sandwich, singing together and those that sing with you. It's one of our favorite songs. A song we sing together at the top of our lungs in the car, and one I frequently hear Chad sing when he comes home. Our happiness is the Gospel, the Spirit, our Leaders and Apostles, Conference weekends, and the Testimony the He lives, that He knows and loves us. My heart is full tonight as I think of how blessed we are and how grateful I am for all that we have.

Whiney Amy

I know I shouldn't post while I feel so ornery and sick, but I have decided to get all the nasty thoughts out in never-never-Internet land so that my sweet husband doesn't have to hear them. Today was my first day back at work and I felt like I was going to pass out most of the day. It's been a little less busy in my office lately so I figured it was safe to miss yesterday. Of course that would be the day that we get 2 new students and lose 5 current students. I missed meetings and medical trainings and I don't even care. At the moment I am watching Rusty destroy yet another stuffed animal and I am grateful that he is getting rid of it, and secretly hoping that it makes him sick.

Oh the bright side I have the most amazing husband who helped me straighten my hair at 5am. Above and beyond the line of duty. I know others say you can't say you love them more and more each day and that all husbands are annoying at times. I think those bitter women are full of crap. I do love Chad more each day, yes there are days I'm not at my best and I think he endures well. But any guy that spends 20 minutes helping you straighten your hair and picks up after you, won't let you carry anything, worries non-stop about you. How you could now love him more and more everyday?

I'm rambling...anyway Chad rocks, I think the drugs are starting to work, and no one can tell me I don't update my blog.

Today is for Amy

There is a song from the musical Company that is starts out with "Today is for Amy", it's pretty annoying and yet it often runs through my head. Today was not for Amy... today I became an old lady, I started it out early at 5 am with a sick dog and continued on through the early morning with being that nasty old lady in the office (that you all know and remember at school) when I yelled at two screeching girls. Yes, I know deep down were just desperately trying to impress the boy who needed help in our office. But after 10 minutes of Giggling, bouncing, screeching, and voluptuous boobs hanging out all over, the old lady yells at them "If you don't need help, LEAVE!!".

That was only 7:10 a.m...I then helped the completly embarassed beet-red boy and wondered if anyone would notice if I just grabbed my keys and went home. Thankfully it did get better, this is going to be a busy year as we are riding high with just short of 2600 students!

This is day three of trying harder to be a better person and day three of praying for more patience...earlier today it looked like it may be the last day of both. But thankfully I have a sweet husband who offered a big drink, take-out and an offer to run away (even if it is to the aka "cave" in the basement)!

11 Years!!

Today is our Anniversary! I spent the first few years thinking "I can't believe I'm married". Now I think I can't imagine we have been together for 11 years. Chad is a rock, he treats me like a queen and keeps me from falling flat on my face all the time.

Georgia!!


We are going to Georgia!! We going to visit my twin Stuart who lives in Atlanta with his wonderful wifey and little girl. We don't get to visit frequently but are planning a trip with my parents this year. I simply cannot wait!! We are officially 15 second apart and look nothing alike but when we are together we are known as the "pet idiots". We both tend to revert back to approx. age 10 laughing uncontrollably and non-stop goofing off. Thankfully our spouses have each other to commiserate with!

Afterwork

They both want exclusive attention and the right to jump and crawl all over Chad. (Personally my favorite time of the day) not only is my sweetheart home, but the dogs leave me alone (yes, I am evil)...they are sweet, but have their pushy, crazy, want to sit on you constantly moments.

Wow... we do remember how to cook!

So I can't really stand Rachel Ray, and the phrase Yum-O really leaves me slightly nauseous. It's just that, that phrase was the the first thought I had in regards to the last few things we have made for meals. Some classic, some super easy, others Divine! Speaking of divine, thanks to those willing to eat some of the pumpkin roll, I didn't have a jelly roll pan so I one and a halved the recipe and made it on a cookie sheet. It was big and a little weird, but so good!
This Sunday afternoon we had Ina's Asian Grill Salmon is was AWESOME...I know you're thinking I am just being biased and after my summer fast food I probably would think a homemade PB & J would seem like a food network original. For a girl that doesn't really like Salmon it was wonderful and we had it yesterday and for leftovers today at lunch.
I have to brag a little as I haven't felt like cooking most of the summer. I need to give a huge thanks to the renewed motivation from my friend Tracy who made the best homemade Cafe Rio Pork salad and Creamy Tomatillo dressing! She helped me get out of the "can't think of anything to make" funk!

Asian Grilled Salmon - Barefoot Contessa

1 side of Fresh or frozen Salmon
Marinade - 1/2 before grilling and 1/2 after grilling
2 Tbs Dijon Mustard
3 Tbs Soy Sauce
5 Tbs Olive Oil
1/2 tsp minced Garlic

While the Grill is heating up cut up Salmon into serving size portions. Whisk together marinade. Drizzle half the marinade on the salmon and allow to sit for 10 minutes.
Brush the grilling rack with oil. Place the salmon on the grill skin side down; discard the marinade the fish was sitting in. Grill 4 to 5 minutes, depending on the thickness of the fish. Turn carefully with a wide spatula and grill for another 4-5 minutes. The Salmon will be slightly rare inside but will continue to cook as it sits. Allow the fish to rest for 10 minutes.

Transfer the fish to a serving plate, skin size down, and spoon the remaining marinade on top.

Libby's Pumpkin Roll

Cake
1/4 cup powdered Sugar (to sprinkle on towel)
3/4 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp Cinnamon
1/2 tsp Cloves
1/4 tsp Salt
3 large eggs
1 cup granulated Sugar
2/3 cup Libby's canned Pumpkin
3/4 cup mini Chocolate Chips or nuts (optional)

Preheat oven to 375. Grease 15 x 10 jelly-roll pan; line with parchment or wax paper. Grease and flour paper. Sprinkle a thin cotton kitchen towel with powdered sugar.

Combine flour, baking powder, baking soda, cinnamon, cloves and salt in small bowl. Beat eggs and sugar in a mixer or mixing bowl until thick. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan. Sprinkle with Chocolate chips or nuts and bake for 13 to 15 minutes until the cake springs back when touched. Immediately loosen around sides and turn out onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.

Filling
1 pkg (8 oz) cream cheese, room temperature
1 cup powdered sugar, sifted
5 TBS butter, softened
1 tsp Vanilla
Beat cream cheese, 1 cup of powdered sugar, butter and vanilla in a small bowl until smooth. Carefully unroll cake. Spread mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate for at least one hour. Sprinkle with powdered sugar before serving.

Green Chili Taco Skillet
1 lb Ground Beef
1/2 tsp Cumin
1/2 Garlic salt
2 Tbs Dried Onion
Cook ground meat until browned then add:
1 can diced Green chilies
1 1/2 cups Green Chili Sauce
1/2 cup of water
6 -6 inch flour or corn tortillas diced into one inch pieces

Bring to a boil reduce to low and cover pan let simmer for 5 minutes. Add
1/2 cup Sharp Cheese and cover until melted.
*note this can be made with Green or Red Sauce.

What we did on our Summer Vacation

This summer has been BUSY, Chad and I have spent a lot of time together just playing, working and having fun.

Chad finished a Masters Degree, Coached softball, cleaned and helped organize, went to Girls Camp, kicked my trash on pretty much every Wii game, facebooked, and watched his fair share of Hell's Kitchen, House...etc.

I cleaned, watched more than my fair share of Hell's Kitchen, House and random selections from Netfilx, cleaned, played a lot, cleaned, threw away more stuff we didn't need, cut Rusty's crazy mane, organized, did I say cleaned... cooked and played a lot of games (yes, and I do have to mention wasted far too much time on facebook (for a short time I became addicted to the quizzes)).

We did BBQing with friends, played with family in Ogden, had a great family reunion in Seattle with the whole Seely, Hatch, Yougstrom group which included Yakima, Seattle, Safeco with the Mariners, Steamers Seafood, and who can forget the Super Mall!!! We finished up July with an amazingly peaceful trip to the Shakespeare Festival with the Warbys.

Whew! We are now both back at work, me busy getting ready for 2500 plus students to invade the school and Chad getting every athlete ready to tryout and hopefully play ball, oh yeah and teach a little Spanish.

This last week we had a little move to Washington scare, kind of out of no where we felt like Chad needed to apply for a Principal job in Yakima. It didn't pan out, we found out later that it was most definitely for the best as the school wasn't in the best of shape. So we're a little sad as we had started to put our eggs in the Washington basket and the possibilities seemed so new and fresh.

So for now we will focus on finding joy in Lehi, and try to get more sleep as apparently when you work you don't get to stay up until 2 every night!

I Did It!

Hi everyone, this is Chad! I am not usually one to brag too much about myself. However, this last week I finished my Master's Degree in Educational Administration. I was able to complete the work with a 3.95 GPA to boot! I ran away and hid from this task many times before finally enrolling and doing it! What a stressful and LONG two years it has been. I am so grateful for an amazing wife who stands by me in all that I do and cheers me all the way! I am also grateful for a loving Heavenly Father who made it all happen for me. Oh, and Mom, I told you I would do better! Stay tuned everyone, who knows where I will get hired in the coming months. There will be change at our house one way or another. Life is, after all, one adventure after another!

Chad Rocks!

Yes we are alive, the hermits live! This is the last school week for Chad and he will have his Masters. I think we can both agree that this has been a long 2 years. Lots of homework, lots of papers, lots of stress and very little sleep. Chad has been a champ the whole time, never complaining...okay well, we both can say we have blocked out the weekly venting sessions :). A few weeks ago we received the above certificate in the mail. I am so proud of Chad for not only getting his masters but for getting all A's as well. He is amazing! I am so blessed to have this wonderful man in my life.
Beyond great grades and homework, we are both off school for about a month, we are planning a trip to Seattle/Yakima and Chad is coaching Girls softball a few nights each week he loves coaching and does such a great job! With Chad finishing his masters we are figuring we may have a move coming up so we are also working on the house, painting, fixing items, DI'ing half of it...along with trying to recall what day of the week it is!

Happy Birthday Chad!!!




Happy Birthday to my best friend! I am so thankful for Chad! He is an amazing husband and friend. He is such a good man and helps me to be a better person. Yes, he is the one that keeps me on the straight and narrow and from visiting President Maverick on Sundays. He is also a great teacher and loves and cares about the students that he works with. These last two years he has been working on his Masters in the evenings after working all day, administrating, scoring or coaching most nights and doing Church/High Council stuff all weekend. We have had so many blessings in our lives that I think I've lost track. I love you honey, I am so thankful for you and I can't imagine living without you! Happy Birthday!

Daddy Moment

So today when I (Chad) came home from work I took the dogs outside to do their duties. Well, Ginger started honking/snorting (it is a septum issue with her breed that kicks in when she breathes in junk sometimes). Rusty got all concerned and wrapped himself around my ankle essentially. Ginger gets very bothered when this happens, so she climbed my leg and had to be held and carried the rest of the way back to the house. I managed to get Rusty to walk and got them both back to the house. We barely got in the house, Ginger still clinging to my left arm. I knelt down to un-clip their leashes. Rusty couldn't handle it anymore, he had to be held too. Well you get the mental image! There I was, kneeling on the entry rug with a dog in each arm. They both nuzzled into me, then they turned and nuzzled each other. Then they were ok and both jumped down. Just a cute moment I wish I had on film!

Selfish Amy and updates

First of all I really do love Rusty...I just didn't realize how selfish I was with my time, sleep, love of clean "dry" carpet, and the ability to walk without having someone dive under my feet. While I don't have kids, I feel like I just got a 2 year old. He is finally making it from midnight to 5:30 and also from 6:30 to 3:00 or even 4pm! The books and Internet do say that a toy dog aka designer dog is much harder to potty train, which is true for Rusty as he does great in the kennel, it's just the rest of the time that he is a walking pee-bomb. You can take him out and 15 minutes later he goes, he is a water hound as well. He loves to drink! I do have to admit that we are having fun, half the time he hops every where he goes definitely spunky.
Chad just finished another class and started this week on his last class for his Masters! With Softball,Freshman Orientation, High Counsel, Seminary, Classroom observations, Papers, and oh yeah Teaching he is just amazing! I still don't know how he manages to get everything done.

Am I the only one that thinks the Old Navy Models are creepy? While looking for new Capri's I ventured out to several Old Navy stores, each time running in to a large display of Mannequins, strangely life sized and all over the place. Beyond creepy. I do think it's a great marketing spot for the company and has to be pretty cost effective at that!

Introducing Rusty

Well, yesterday we went to lunch. As we came out of the restaurant, we noticed a pen with some puppies across the street. We decided to just go over and look. No harm in that right? We talked to the man for a minute and told him we already had a female and thought it would have to be a calm male to be even considered. He handed me this little guy! He immediately tucked into my chest. Uh Oh! Then, when I tried to put him down he wrapped himself around my hand and wouldn't let go. I was hooked! We decided to think about it and left. After about an hour and a half of discussion and thought, Amy called me and asked what I would name him. I said, he is Rusty! I was coaching a ballgame, so she went and picked him up and then brought him to the field! He is a Snorkie, which is a Yorkie and Mini-Schnauzer hybrid. He is hypo-allergenic and does not shed. Big sister Ginger is still getting used to the newcomer as the pouty picture of her would suggest, but we are feeling good about our expanded family. As you can see, he is a little doll and he definitely has plenty of personality! Ladies and Gentlemen meet Rusty Seely!

I Miss Chad!!!


I have been minus my partner this weekend and I just don't know how I became so dependent on another person! I have felt so lost! And he has only been gone since Thursday! I have a good friend who has a husband in the Army and he is going to be out of the states for at least a year. In only my little window of time I know I have no right to compare but I have such great empathy for her! I don't know that I am as strong as she is, I don't know that I could do that.
Chad is out of town at a Softball Tournament this weekend and Choir Tour next week and I am already dreading next week! So to occupy my time I am focusing my efforts and time (so much time!) on the house. I have cleaned windows, painted the front door, and cleaned house. I have huge plans for next weekend but it is also the end of the quarter for me, so we will see how wasted I am and if I just cave and finish the two books on my nightstand!

Tree of Life "For Dummies"


So I have started reading the Book of Mormon again and I'm loving it! My SIL Erin sent out a chart and by reading just a couple of chapters a day I can be done in June. So today I was reading in 1 Nephi 15 and truly laughed out loud. Nephi has just seen the DVR of the Vision and his brothers are confused and they start asking him questions. Nephi (righteous powerhouse) shares with them the plain Jane answers. It could be that I am currently reading a "For Dummies" book on CS3 or that I am just completely sacrilegious. I just love sweet Nephi giving a Dummies version for his lame brothers. Check it out 1 Nephi 15: 21-36. I read the vision yesterday and today the "For Dummies" version just really hit me! It's probably that I am more of a Lemuel and it made a lot more sense to me, or that I took a nap before I read today...The power of a nap!!

Yes, we have been busy! One great event was last week American Fork Girls Basketball team took State in the 5A Classification. We are still on cloud 9, and have had the flu, spring sports try-outs, Softball practices and games and very little sleep...we'll write more later!

My Sister


I have the best sister! She is 8 years older than I am and we have been close all my life. I had a great conversation with her this afternoon and it warms my heart to know that she is mine and always will be! From her dressing me up in her baby doll clothes, to baking Christmas treats together we always have a great time together. She is an amazing teacher, mom, counselor and friend. And I love her so much! The first picture is the day she broke a crowbar...yeah she is tough!
This last year I was able to go to camp with her and she was my salvation! From plenty of tears to laughing our guts off at night we had a wonderful time! For a brief moment in time it was like we were back in the home we grew up in talking in our beds with the lights out. She is such a beautiful person and I am blessed to have her in my life. Yes, I am also blessed to have the boys in the pics above as rockstar brothers, while spunky, cheeky boys as youth they are all wildly handsome men now. (Yes, the sweet little redhead is my twin.)

Every once in awhile you just have to stop and realize how fortunate you are. I have found in my life that no matter how many stresses and concerns pound on me at work or in my calling there is always one constant: Amy! Amy is my rock, my sanity, and my queen! I can't imagine my life without her and certainly don't want to! I hope that all of you, my friends and loved ones, are as lucky as I am. I love you sweetheart! Happy Valentines

This Valentines we decided to forgo gifts and flowers and run away together. No one knew where we were, no phone calls, no contact! It was wonderful. We went to Logan...yes you think, Logan...what the? But Logan is my new favorite place, in fact I'd move there in a heartbeat! No smog, they have a beautiful temple, great places to eat, lovely houses, plenty of high schools and Aggie Ice Cream. Yes the BYU Creamery still reigns supreme, but Aggie ice cream could take a good second. With our extended weekend we were able to stay three nights in Logan and my brother Eric and his cute fam took care of Ginger. They are so good with her and he has such sweet kids.
Valentines was a beautiful day we went to an early dinner at Hamilton's with a lovely dinner of Garlic Rubbed Steak and Salmon Florentine. Thanks to Mom and Dad Seely we received a cute card and a great gift card! It made for a wonderful dinner and we felt so spoiled. That afternoon we went to see the sites of Logan and the surrounding cities. We went to Gossner Cheese factory and picked up Smoked cheese and cheese curd and then to the Pepperidge Farms Factory in Richmond to get crackers and treats (yes, we did see the goldfish). All for a great carpet picnic to watch the BYU game that evening. We had such a fun time. I fall more in love with Chad every day! He is so amazing and puts up with so much from me! I'm so thankful for him and for the blessing he is in my life. Thank you for the wonderful Valentines day sweetheart!

Off the Wagon


Our family has been doing a family fitness challenge the last month and a half. This challenge includes points for certain things. So you get 10 points for no treats, 5 points for one treat and 0 points for multiple treats...also known as falling off the wagon. Well I fell off the wagon, and it drug me behind it for the evening, miles and miles of butter laden roads. Don't get me wrong I still worked out, packed for our weekend getaway, finished cleaning bathrooms etc. But I also made rolls, raspberry surprise cupcakes, lemon bars and chocolate chip cookies...no it wasn't a binge night (I'm sure you're not convinced) after a few bites of each I am totally sugared out and completely satisfied! And I think I found the best Chocolate Chip Cookie I have ever had. It reminds me of Mrs. Fields. And yes, don't think your eyes are deceiving you. It's at least three times the size of one cookie. I'll post recipes when we get back next week.

Teeth stink!!


This is what my cheek feels like...yeah maybe not that cute. I have an infection on a tooth that was crowned over a year ago. Root Canal anyone?? I hate teeth! I know my mom would say be grateful for what I have and I am most of the time, just not this weekend. So Friday I called the Dentist tole him what the problem was and he called in a prescription for me, I thought I was a little ahead of the game getting the script early and would be fine. Which I was until Saturday night. We went to a Hot dog Roast at a friends and it had been a while since my last dose of Ibuprofen. So I tried Lortab...I think I have had it before, it helped for a while, went home, felt worse, took more in the middle of the night, still didn't work... massive pain... took more before I went to church (it does say you can take it every 4 hours (since I think I totally sound like a druggie)), halfway through Sacrament meeting I am beyond nauseous and trying not to throw up. My sweet husband takes me home leaves me on the couch and runs off to more meetings, yes, he's amazing! So I worship the porcelain throne the rest of the night and finally the effects of Lortab leave my system. How can people love this stuff?? It's now Monday night after a very long day I think the Penicillin is starting to work. I know for sure that prayer works! I also know that I have the best husband in the world who is willing to hold back my hair (if needed and thankfully it wasn't) and rub my back when I cry!

"I'm a Fan!"

To quote a good friend…beyond white dresses with blue satin sashes and brown paper packages tied up with string, I have a few things that I am a Fan of, stuff that is on my temporary list of things I love (a least this month :)).

Smoked Paprika – I have used this in so many things and it is by far one of my favorite spices right now. From Red Beans and Rice to Racclette we have found many great uses for this fab spice! New Red Pot – This was a Christmas gift that I bought and told Chad that he gave it to me. : ) I love this pot, and love knowing that I didn't have to pay $400 like it’s Le Creuset cousin. Kitchen Aid - I use my Kitchen Aid for almost everything. I got a Cuisinart this Christmas and I am still having a hard time sharing the love with both of them. My favorite Organizing Shoe Rack – nope not used for shoes, I have one in my bathroom behind the door with everything you would need to get ready for the day. I love it, nothing left on the counter and it’s all stashed in mesh pockets. I have another one in our hall closet that holds gloves, scarves, umbrellas and even some gardening tools. It’s a must have from Wal-mart or even Ross under $20.

My energizer bunny

So this week has been long! Super long, super sad, super hormonal...yes I know my life is good, but Satan really has worked hard on me this week. My sweet husband brought these home to me tonight. I love his so much, he is such a wonderful man that puts up with so much and like the energizer bunny keeps on going.

Weekly Update

Even though we had Monday off, this seemed to be a busy week. With Basketball two nights and a new term start at Bingham it seems like some days just flew by. I've finally complained enough to gain better than full access to our new grading system at work and yesterday was probably the most peaceful day I've had! I can now change/update attendance and grades in one click. So nice! Monday we had dinner at Applebees with good friends we were suppose to go miniature golfing but all of us being blessed with the gift of gab ended up talking and telling stories for almost 3 hours. We feel so blessed to have great friends! Today (Saturday) has been a peaceful day including sleeping in, a trip to the grocery store, watching basketball and making homemade Chocolate Carmel cookies, Salsa, Guac and tacos. Oh how I love Homemade Mexican food! It brings wonderful memories of childhood every time I smell the hot chili pequin, and cooking corn tortillas. At least once a month my Dad would fry up homemade corn chips and we would have tacos or enchiladas with Rio's salsa, if you have never made your own chips you are definitely missing out on a choice experience and yes, a lot of oil...

Bigger Pictures

Amy and Wayne's wedding, here are the bigger pictures, crazy me I thought that the collage would open up to full size. I hate adding pics in as they are all out of order, but I'm sure you'll understand what order everything was in. Wedding, luncheon, pictures, reception, dancing. Amy and Wayne made or bought most of their decorations and they were amazing! Wayne does work with Vinyl and Metal and he made the all the words and the wreath holders too. They are beautiful! Plus he did the metal Bishops over the mirror on the middle of the picture table. They are both so talented! They should be arriving home from their honeymoon tomorrow and I'm sure this day, though only a week ago, probably feels like it lasted 20 minutes and was a year ago!
